Selection OR is a rare and unique oyster and represents no more than 5% of our annual production. Each oyster is carefully selected to keep only the best specimens, to offer you a true jewel of the sea.
The Gold Selection is carefully selected after three strict sorting phases to guarantee the best quality. In general, the Boutrais teams select the batches of oysters most exposed to the sea swells because they consider them to be the best.
During calibration, only the heaviest oysters are kept and during packing, only the roundest and roundest oysters are kept to ensure an unparalleled meat ratio. For a touch of refinement and distinction, 4-year-old oysters are covered with 22 carat edible gold flakes.
