The Sentinelle oyster is the second gem produced by La Famille Boutrais. It carries more classical features. This oyster is well suited accompanied with the acidity of lemon or shallots and vinegar. It bears a similar production to the one of the Ostra Regal. The seeds come from France and are grown in Clew Bay where they stay until reaching half-grown age. They are then dispatched to the coves of Dundrum and Trawenagh in order to grow to the adult size.
The taste of the Sentinelle It is a special oyster, meaty and crispy. The subtle aroma is tinted with hazelnut and almond hues at first, finishing with an iodine taste.
Visual aspect It is dominated by a reserve of sugar with mother of pearl aspect between the heart and the shell junction. The mantle is dark and fine. It englobes a muscle thinner than the one of the Ostra Regal, but remains crispy once being eaten.
